Tortilla Soup

2 tsp
Olive Oil
1/3 C
Onion, diced
1 tsp
Garlic, minced
Jalapeno, seeded
8 C
Chicken Broth
Green Chilies, diced
1/2 C
Tomato Juice
2 Tbsp
Chili Powder
1 Tbsp
2 tsp
1 C
Tomatoes, fresh & diced
Chicken Breasts, cooked & diced
  Corn Tortilla, cut into strips and fried crisp
  Shredded Pepper Jack Cheese
  Diced Avocados
In a pot pour in olive oil, onions, garlic, diced jalapeno pepper and
sauté till onions are tender add chicken and broth, tomatoes, tomato
juice, chili powder, cumin, oregano, and cilantro.  Reduce heat and
simmer for 30 minutes.
To serve: Ladle into a bowl then top it with tortilla strips, shredded
pepper jack cheese and diced avocados. I like to add a little dollop of
sour cream too.
